It is not easy to find the right sake for you! It’s impossible to taste all sake at a liquor shop, so we will share the basic points of sake categories.

 

1. Sweet or Dry taste
As you know taste is really relying on to personal opinion. However you need some guidelines to narrow down your choice.
There are three guide lines to categorize sake taste; Nihonshudo(㸦日本酒度㸧), Sando(㸦酸度㸧), Aminosando(㸦アミノ酸度㸧).

Nihonshudao
Nihonshudo is a numerical expression of the degree of dryness or sweetness that utilizes the specific gravity system that measures the gravity of sugar content. Water is zero, sweet sake is expresses as a negative number and dry sake is expresses as a positive number.
Sando
Sando is the numerical expression of acid levels in sake. Generally sake with high acid levels tastes rich and dry, while sake with low acid tastes light and sweet.
Aminosando
Aminosando represents the amount of amino acids present in the sake. Amino acids are important elements of flavor. Generally sake with high amino acid contain tastes rich, while sake with low amino acid contains tastes light.
2. Fragrance and Flavor
You don’t have to choose sake with only a sweet or dry taste. You might enjoy fragrant and flavor. This is a just a basic guide line for sake.
Aromatic sake

Aromatic sake
This type of sake is match with fruits, vegetables and herbs. So pairing with appetizers is preferable. Choose cuisine as if pairing with fruity white wine, because the main characteristic of aromatic sake is a fruity aroma.
Refreshing sake
This type of sake is match with light and simple cuisines. It is very easy to matches wide range of cuisines.
Rich sake
This type of sale is match with rich cuisines that contain umami. It is suitable to drink with meals, especially with traditional Japanese cuisine. Choose cuisines as if paring with red wine, because the main characteristic of this is rich flavor.
Aged sake
This type of sake is match with cuisines that are rich and layered in flavor.
